Ingredients

  • 1 tablespoon olive oil

  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) black beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 4 cups chicken broth
  • Salt and black pepper to taste

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken cubes and cook until browned. Remove the chicken from the pot and set aside.
