Ingredients

  • 2 pounds chicken gizzards
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • Canola oil for frying

Directions

  1. In a large bowl, combine the chicken gizzards and buttermilk. Cover and refrigerate for 1 hour.
  2. In a shallow bowl, combine the flour, garlic powder, onion powder, smoked paprika, dried thyme, salt, and pepper. Mix until combined.
  3. Heat the oil in a deep fryer or a large pot to 350 degrees Fahrenheit.
  4. Remove the gizzards from the buttermilk and dredge them in the flour mixture, making sure to coat them completely.
  5. Carefully add the gizzards to the hot oil and fry for 4-5 minutes, or until golden brown and crispy.
  6. Remove from the oil and place on paper towels to drain.
  7. Serve with your favorite dipping sauce. Enjoy!
