  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 teaspoons salt
  • 1/4 cup unsalted butter, melted
  • 1 1/4 cups warm milk (110°F)
  • For the Dutch Crunch Topping:
  • 1/3 cup rice flour
  • 1/3 cup warm water
  • 1 tablespoon active dry yeast
  • 1 tablespoon sugar
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon salt

Directions

  1. In a mixing bowl, combine the all-purpose flour, sugar, yeast, and salt for the dough.
  2. Add the melted butter and warm milk to the dry ingredients. Mix until a soft dough forms.
  3. Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Punch down the dough and divide it into 12 equal portions. Shape each portion into a smooth ball and place them on a greased baking sheet, leaving some space between them.
  6. In a small bowl, whisk together the rice flour, warm water, active dry yeast, sugar, vegetable oil, and salt for the Dutch Crunch topping.
  7. Allow the Dutch Crunch topping mixture to rest for 15 minutes to activate the yeast.
  8. Preheat the oven to 375°F (190°C).
  9. Gently brush the Dutch Crunch topping over the top of each roll, covering the surface completely.
  10. Let the rolls rise for another 30 minutes.
  11. Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
  12. Remove the rolls from the oven and let them cool on a wire rack before serving.
