Ingredients

  • 24 medium-sized white button mushrooms
  • 1/2 pound Italian sausage, casings removed
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup finely chopped onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Remove the stems from the mushrooms and finely chop them.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped mushroom stems, Italian sausage, garlic, and onions. Cook until the sausage is browned and no longer pink, breaking it up with a spatula as it cooks.
  4. Remove the skillet from the heat and stir in the breadcrumbs, Parmesan cheese, parsley, and mozzarella cheese. Season with salt and pepper to taste.
  5. Arrange the mushroom caps on the prepared baking sheet, hollow side up. Spoon the sausage mixture into each mushroom cap, pressing gently to fill it completely.
  6. Bake the stuffed mushrooms in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  7. Remove from the oven and let cool for a few minutes before serving. Serve hot with your favorite dipping sauce.
