Made with creamy potatoes, savory broth, and topped with crispy bacon and cheddar cheese, this soup is perfect for warming up on chilly winter days. It's easy to make and will leave you feeling satisfied and cozy. Serve it with crusty bread for a complete meal that the entire family will love.

Ingredients

  • 6 slices of bacon, chopped
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 4 cups of chicken or vegetable broth
  • 5 cups of peeled and diced potatoes
  • 1 cup of milk
  • 1/2 cup of heavy cream
  • 1 cup of shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish

Directions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon grease in the pot.
  2. Add the diced onion to the pot and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
  3. Pour in the chicken or vegetable broth and add the diced potatoes. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Using a potato masher or immersion blender, partially mash the potatoes to thicken the soup. Leave some chunks for texture.
  5. Stir in the milk, heavy cream, and shredded cheddar cheese. Season with salt and pepper to taste. Cook for an additional 5 minutes until the cheese is melted and the soup is heated through.
  6. Serve the soup hot, garnished with the crispy bacon, chopped green onions, and additional shredded cheddar cheese, if desired.
