Ingredients

  • 6 slices of bacon, chopped
  • 1 large onion, diced

  • 2 cans (15 ounces each) of black beans, drained and rinsed
  • 4 cups of vegetable broth
  • 1 can (14.5 ounces) of diced tomatoes
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cumin
  • Salt and black pepper to taste
  • Chopped fresh cilantro for garnish

Directions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate.
