Ingredients
- 1 whole Rabbit
- 1 tablespoon Salt
- 1 teaspoon freshly ground Black Pepper
- 1 tablespoon Paprika
- 2 tablespoons Olive Oil
- 2 cloves Garlic, minced
- 2 tablespoons chopped fresh Parsley
Directions
- Preheat oven to 350°F (175°C).
- Rinse the rabbit and pat dry with paper towels.
- In a small bowl, mix together salt, pepper, and paprika. Sprinkle the mixture all over the rabbit.
- Heat olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute, stirring constantly. Add the rabbit and cook for 5 minutes, turning to brown all sides.
- Transfer the rabbit to a baking dish. Bake for 1 hour and 15 minutes, until the rabbit is tender and cooked through.
- Sprinkle with parsley and serve.
