Ingredients

  • 1 whole Rabbit
  • 1 tablespoon Salt
  • 1 teaspoon freshly ground Black Pepper
  • 1 tablespoon Paprika
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • 2 tablespoons chopped fresh Parsley

Directions

  1. Preheat oven to 350°F (175°C).
  2. Rinse the rabbit and pat dry with paper towels.
  3. In a small bowl, mix together salt, pepper, and paprika. Sprinkle the mixture all over the rabbit.
  4. Heat olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute, stirring constantly. Add the rabbit and cook for 5 minutes, turning to brown all sides.
  5. Transfer the rabbit to a baking dish. Bake for 1 hour and 15 minutes, until the rabbit is tender and cooked through.
  6. Sprinkle with parsley and serve.
