Ingredients
- 1 pound dry lima beans
- 1 pound smoked ham hocks
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- Salt and pepper, to taste
- 3 cups chicken stock
- 2 tablespoons olive oil
Directions
- Pick through the lima beans and discard any stones or debris.
- Soak the beans overnight or use the quick-soak method. After soaking, drain and rinse the beans.
- In a large skillet, heat the olive oil over medium heat. Add the onion and sauté until softened, about 5 minutes.
- Add the garlic and Cajun seasoning and cook for 1 minute more.
- Transfer the onion mixture to a slow cooker. Add the ham hocks, lima beans, chicken stock, and salt and pepper. Stir to combine.
- Cover and cook on low for 8 to 10 hours, or until the beans are tender.
- Taste and adjust seasonings if necessary. Serve hot.
