Slow Cooker Southern Lima Beans and Ham

Ingredients

  • 1 pound dry lima beans
  • 1 pound smoked ham hocks
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste
  • 3 cups chicken stock
  • 2 tablespoons olive oil

Directions

  1. Pick through the lima beans and discard any stones or debris.
  2. Soak the beans overnight or use the quick-soak method. After soaking, drain and rinse the beans.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and sauté until softened, about 5 minutes.
  4. Add the garlic and Cajun seasoning and cook for 1 minute more.
  5. Transfer the onion mixture to a slow cooker. Add the ham hocks, lima beans, chicken stock, and salt and pepper. Stir to combine.
  6. Cover and cook on low for 8 to 10 hours, or until the beans are tender.
  7. Taste and adjust seasonings if necessary. Serve hot.
