Ingredients
1 pound dry lima beans
1 pound smoked ham hocks
1 onion, diced
3 cloves garlic, minced
1 tablespoon Cajun seasoning

3 cups chicken stock
2 tablespoons olive oil
Directions
Pick through the lima beans and discard any stones or debris.
Soak the beans overnight or use the quick-soak method. After soaking, drain and rinse the beans.
In a large skillet, heat the olive oil over medium heat. Add the onion and sauté until softened, about 5 minutes.
Add the garlic and Cajun seasoning and cook for 1 minute more.
Transfer the onion mixture to a slow cooker. Add the ham hocks, lima beans, chicken stock, and salt and pepper. Stir to combine.
Cover and cook on low for 8 to 10 hours, or until the beans are tender.
Taste and adjust seasonings if necessary. Serve hot.
