Ingredients

  • 3 pounds oxtail, cut into pieces
  • 2 tablespoons smoked paprika

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 2 medium sweet potatoes, peeled and diced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions

  1. In a small bowl, combine the smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture all over the oxtail pieces.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Working in batches, brown the oxtail pieces on all sides. Transfer the browned oxtail to the slow cooker.
  3. In the same skillet, add the chopped onion, minced garlic, celery, and carrots. Sauté until the vegetables are tender.
  4. Transfer the sautéed vegetables to the slow cooker with the oxtail.
  5. Add the diced sweet potatoes, beef broth, red wine, bay leaves, Worcestershire sauce, tomato paste, dried thyme, dried rosemary, smoked paprika, and cayenne pepper (if using) to the slow cooker. Stir well to combine.
  6. Cover the slow cooker and cook on low for 6 hours, or until the oxtail is tender and falling off the bone.
