Ingredients

  • 2 pounds beef stew meat
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 can diced tomatoes
  • 1 can artichoke hearts, drained and chopped
  • 1/2 cup black olives, pitted and sliced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Directions

  1. In a slow cooker, combine the beef, onion, garlic, beef broth, tomatoes, artichoke hearts, olives, and Italian seasoning. Season with salt and pepper, to taste.
  2. Cover and cook on low for 6-8 hours, or on high for 4-5 hours.
  3. Serve with crusty bread or over cooked pasta.
