Ingredients

  • 1 package of rice noodles
  • 1 tablespoon of sesame oil
  • 1 clove of garlic, minced
  • 1 tablespoon of grated ginger
  • 1/2 cup of chopped onion
  • 1/2 cup of carrots, julienned
  • 1/2 cup of bell pepper, julienned
  • 1/2 cup of mushrooms, chopped
  • 1/4 cup of soy sauce
  • 1/4 cup of vegetable broth
  • 1 teaspoon of sugar
  • Salt and pepper, to taste
  • 2 tablespoons of chopped fresh cilantro, for garnish

Directions

  1. Cook the rice noodles in a pot of boiling water, according to the package instructions.
  2. Drain the noodles and set aside.
  3. In a large skillet, heat the sesame oil over medium heat. Add the garlic, ginger, onion, carrots, bell pepper, and mushrooms. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
  4. Add the cooked noodles to the skillet and stir to combine. Add the soy sauce, vegetable broth, sugar, salt, and pepper. Cook, stirring occasionally, for another 3-5 minutes, until the noodles are heated through.
  5. Divide the noodles among individual serving bowls. Garnish with fresh cilantro and serve.
