Directions
Cook the rice noodles in a pot of boiling water, according to the package instructions.
Drain the noodles and set aside.
In a large skillet, heat the sesame oil over medium heat. Add the garlic, ginger, onion, carrots, bell pepper, and mushrooms. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
Add the cooked noodles to the skillet and stir to combine. Add the soy sauce, vegetable broth, sugar, salt, and pepper. Cook, stirring occasionally, for another 3-5 minutes, until the noodles are heated through.
Divide the noodles among individual serving bowls. Garnish with fresh cilantro and serve.
