Ingredients

  • 2 pounds of chicken, beef, or mutton
  • 1/4 cup of vegetable oil
  • 2 cloves of garlic, minced
  • 2 tablespoons of fresh ginger, grated
  • 2 tablespoons of soy sauce
  • 2 tablespoons of fish sauce
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of ground cumin
  • 1/4 teaspoon of ground cloves
  • 1/2 teaspoon of freshly ground black pepper
  • 1/4 cup of unsalted peanuts, finely ground

Directions

  1. Cut the chicken, beef, or mutton into 1-inch cubes and place in a large bowl.
  2. In a separate bowl, mix together the vegetable oil, garlic, ginger, soy sauce, fish sauce, turmeric, coriander, cumin, cloves, and pepper.
  3. Pour the marinade over the meat cubes and mix until all the cubes are evenly coated.
  4. Cover the bowl with plastic wrap and place in the refrigerator for at least 30 minutes.
  5. Meanwhile, heat a grill or grill pan over medium-high heat.
  6. Thread the marinated meat onto skewers and place on the hot grill.
  7. Grill for 5 to 7 minutes per side, or until the meat is cooked through.
  8. Serve the satay skewers with the peanut sauce.
