Ingredients

  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups dry red beans, soaked overnight and drained
  • 6 cups chicken broth
  • 4 cups cooked white rice
  • Salt to taste

Directions

  1. Heat the oil in a large pot over medium heat.
  2. Add the onion, bell pepper, garlic, oregano, thyme, Cajun seasoning, and pepper to the pot.
  3. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  4. Add the red beans and chicken broth to the pot and bring to a boil.
  5. Reduce the heat to low and simmer, stirring occasionally, until the beans are tender, about 30 minutes.
  6. Add the cooked rice to the pot and stir to combine.
  7. Season with salt to taste.
  8. Serve warm.
