Ingredients
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon freshly ground black pepper
- 2 cups dry red beans, soaked overnight and drained
- 6 cups chicken broth
- 4 cups cooked white rice
- Salt to taste
Directions
- Heat the oil in a large pot over medium heat.
- Add the onion, bell pepper, garlic, oregano, thyme, Cajun seasoning, and pepper to the pot.
- Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Add the red beans and chicken broth to the pot and bring to a boil.
- Reduce the heat to low and simmer, stirring occasionally, until the beans are tender, about 30 minutes.
- Add the cooked rice to the pot and stir to combine.
- Season with salt to taste.
- Serve warm.
