Ingredients
- 1/4 cup olive oil
- 3 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon kosher salt
Directions
- In a medium bowl, combine the olive oil, lemon juice, garlic, oregano, cumin, paprika, coriander, cinnamon, pepper, and salt. Whisk until blended and smooth.
- Add the cubed lamb to the marinade and stir to combine. Cover and refrigerate for at least 1 hour or up to 8 hours.
- Preheat the grill to medium-high heat. Thread the marinated lamb onto skewers and grill for about 5 minutes, turning occasionally, until the lamb is cooked to desired doneness.
