- 1/2 cup (1 stick) butter, softened
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1 3/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup dried cranberries
- 1/2 cup chopped almonds
Directions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, vanilla, cinnamon, nutmeg, and allspice.
- In a medium bowl, sift together the flour and salt. Gradually add the flour mixture to the butter mixture, mixing until well combined. Stir in the cranberries and almonds.
- Roll the dough into 1-inch balls and place on the prepared baking sheets. Flatten the cookies slightly with the back of a spoon. Bake for 12 to 14 minutes, or until lightly golden.
- Transfer the cookies to a wire rack to cool.
