Ingredients

  • 2 cups of lettuce, washed and chopped
  • 1/2 cup of red onion, diced
  • 1/2 cup of cherry tomatoes, halved
  • 1/2 cup of cucumber, diced
  • 1/4 cup of dried cranberries
  • 1/2 cup of sliced strawberries
  • 1/2 cup of sliced kiwi
  • 1/4 cup of feta cheese, crumbled
  • 1/4 cup of olive oil
  • 2 tablespoons of freshly squeezed lemon juice
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the lettuce, red onion, cherry tomatoes, cucumber, dried cranberries, strawberries, and kiwi.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Sprinkle the feta cheese over the top of the salad.
  5. Serve immediately.
