Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup white sugar
  • 1/4 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1/2 cup milk

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then mix in the vanilla and lemon zest. Beat in the flour mixture alternately with the milk.
  4. Divide the batter evenly among the prepared muffin cups. Bake in the preheated oven for 12 to 15 minutes, or until a toothpick inserted into the center of a cake shot comes out clean.
  5. Allow the cake shots to cool for 5 minutes in the pan before turning out onto a wire rack to cool completely.
