Ingredients
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 2 teaspoons grated orange peel
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped almonds
Directions
- Preheat oven to 350°F (175°C). Grease and flour a baking sheet.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time, then stir in orange peel and vanilla.
- In another bowl, combine flour, baking powder, and salt. Gradually stir into the creamed mixture until blended. Fold in almonds.
- Roll dough into two logs about 12 inches long and 2 inches wide. Place on prepared baking sheet and flatten slightly.
- Bake for 25 minutes, or until lightly browned. Remove from oven and let cool for 10 minutes.
- Cut logs into 1/2-inch slices and place cut-side down on baking sheet. Bake for 10 minutes more, or until crisp.
- Cool completely before serving.
