Ingredients

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons grated orange peel
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped almonds

Directions

  1. Preheat oven to 350°F (175°C). Grease and flour a baking sheet.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time, then stir in orange peel and vanilla.
  3. In another bowl, combine flour, baking powder, and salt. Gradually stir into the creamed mixture until blended. Fold in almonds.
  4. Roll dough into two logs about 12 inches long and 2 inches wide. Place on prepared baking sheet and flatten slightly.
  5. Bake for 25 minutes, or until lightly browned. Remove from oven and let cool for 10 minutes.
  6. Cut logs into 1/2-inch slices and place cut-side down on baking sheet. Bake for 10 minutes more, or until crisp.
  7. Cool completely before serving.
