Ingredients
1 pound medium-sized shrimp, cooked, peeled and deveined
1 cup fresh pineapple, diced
1/2 cup fresh lime juice
1/2 cup chopped fresh cilantro
1 jalapeno pepper, seeded and minced
1/4 cup finely chopped red onion
2 cloves garlic, minced
1 teaspoon olive oil
Salt and pepper to taste
Directions
In a medium bowl, combine the shrimp, pineapple, lime juice, cilantro, jalapeno, onion and garlic.
Drizzle with olive oil and season with salt and pepper, to taste.
Cover and refrigerate for at least 30 minutes, stirring occasionally.
Serve chilled, with tortilla chips or crackers.
