Ingredients
- 1 pound medium-sized shrimp, cooked, peeled and deveined
- 1 cup fresh pineapple, diced
- 1/2 cup fresh lime juice
- 1/2 cup chopped fresh cilantro
- 1 jalapeno pepper, seeded and minced
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- Salt and pepper to taste
Directions
- In a medium bowl, combine the shrimp, pineapple, lime juice, cilantro, jalapeno, onion and garlic.
- Drizzle with olive oil and season with salt and pepper, to taste.
- Cover and refrigerate for at least 30 minutes, stirring occasionally.
- Serve chilled, with tortilla chips or crackers.
