Ingredients

  • 1 butternut squash, cut into cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons lime juice
  • 8 small tortillas
  • 1/4 cup cilantro, chopped
  • 1/4 cup sour cream
  • 1/2 cup Monterey Jack cheese, shredded

Directions

  1. Preheat oven to 400F.
  2. In a large bowl, mix together butternut squash, olive oil, garlic powder, chili powder, cumin, paprika, salt, black pepper, and cayenne pepper.
  3. Spread the butternut squash on a baking sheet and bake for 20 minutes.
  4. Meanwhile, heat the tortillas in a large skillet over medium heat.
  5. Once the butternut squash is done, add the lime juice and mix to combine.
  6. To assemble the tacos, place a few spoonfuls of butternut squash into each tortilla. Top with cilantro, sour cream, and cheese.
  7. Serve and enjoy!
