Ingredients
- 1 butternut squash, cut into cubes
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 2 tablespoons lime juice
- 8 small tortillas
- 1/4 cup cilantro, chopped
- 1/4 cup sour cream
- 1/2 cup Monterey Jack cheese, shredded
Directions
- Preheat oven to 400F.
- In a large bowl, mix together butternut squash, olive oil, garlic powder, chili powder, cumin, paprika, salt, black pepper, and cayenne pepper.
- Spread the butternut squash on a baking sheet and bake for 20 minutes.
- Meanwhile, heat the tortillas in a large skillet over medium heat.
- Once the butternut squash is done, add the lime juice and mix to combine.
- To assemble the tacos, place a few spoonfuls of butternut squash into each tortilla. Top with cilantro, sour cream, and cheese.
