Easy Oven-Roasted Delicata Squash

Ingredients

  • 2 delicata squash
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Cut the squash in half lengthwise and scoop out the seeds.
  3. Cut the squash into half moons.
  4. In a large bowl, combine the olive oil, garlic powder, smoked paprika, oregano, salt and pepper. Add the squash and toss to coat.
  5. Spread the squash on a baking sheet lined with parchment paper.
  6. Bake for 25 minutes or until the squash is tender and lightly browned.
  7. Serve and enjoy!
