Spicy Couscous with Dates
Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, melted
1/2 cup packed brown sugar
1 egg
1/2 cup buttermilk
1/2 cup chopped walnuts
1/2 cup raisins
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
In a medium bowl, sift together flour, baking powder, baking soda and salt. Set aside.
In a large bowl, cream together melted butter and brown sugar. Beat in egg. Stir in buttermilk. Add dry ingredients, and mix until blended.
Stir in walnuts and raisins. Pour batter into prepared loaf pan.
Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into center of the loaf comes out clean.
Allow to cool in pan for 10 minutes, then turn out onto a wire rack.
