Ingredients
- 1 lb. shrimp, peeled and deveined
- 1/3 cup olive oil
- 2 cloves garlic, minced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 lb. spaghetti or other pasta
Directions
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to package directions.
- Meanwhile, in a large skillet, heat the oil over medium heat. Add the garlic and cook for 1 minute.
- Add the shrimp and cook for 4-5 minutes, until the shrimp is cooked through.
- Add the feta cheese and parsley to the skillet and stir to combine.
- Drain the cooked pasta and add to the skillet with the shrimp and feta cheese mixture.
- Stir to combine and season with salt and pepper, to taste.
- Serve warm.
