Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken stock
  • 1/2 cup heavy cream
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 cups frozen corn
  • 1 pound cooked shrimp, peeled and deveined

Directions

  1. In a large pot over medium-high heat, heat the olive oil. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and cook for 1 minute. Add the chicken stock, cream, thyme, oregano, red pepper flakes, salt, and pepper. Bring to a boil.
  3. In a small bowl, whisk together the flour and 1/2 cup of the hot liquid from the pot. Pour into the pot and whisk until combined. Reduce the heat to medium and simmer for 5 minutes.
  4. Add the corn and shrimp to the pot and simmer for 5 minutes, or until the shrimp are cooked through.
  5. Serve the chowder hot.
