Ingredients

  • 3 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground black pepper
  • 4 cups vegetable broth
  • 1 (14-ounce) can diced tomatoes
  • 2 oranges, peeled and diced
  • 1/2 cup uncooked long-grain white rice
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the oil in a large pot over medium-high heat. Add the onion, garlic, carrots, celery, thyme, oregano, and black pepper. Cook, stirring often, until the vegetables are tender, about 5 minutes.
  2. Add the broth, tomatoes, oranges, and rice to the pot. Bring to a boil, reduce the heat to low, and simmer until the rice is tender, about 15 minutes.
  3. Stir in the parsley and season with salt and pepper to taste.
  4. Ladle the soup into individual bowls and serve.
