Ingredients

  • 2 cups cooked, shredded rotisserie chicken
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped scallions
  • 1/4 cup sliced almonds
  • 1/4 cup honey
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame seeds
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the chicken, carrots, cucumber, scallions and almonds.
  2. In a small bowl, whisk together the honey, sesame oil, rice vinegar, sesame seeds, salt and pepper.
  3. Pour the dressing over the chicken mixture and toss to combine.
  4. Serve the salad chilled or at room temperature.
