Ingredients

  • 1 lb. carrots, shredded
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Directions

  1. In a large bowl, combine the shredded carrots, olive oil, lemon juice, salt, and pepper. Mix until all the ingredients are evenly distributed.
