Ingredients
- 1 lb. carrots, shredded
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Directions
- In a large bowl, combine the shredded carrots, olive oil, lemon juice, salt, and pepper. Mix until all the ingredients are evenly distributed.
- Add the chopped parsley and mix again.
- Serve the salad immediately, or chill in the refrigerator for at least an hour before serving.
