Ingredients

  • 1 lb chicken breasts, cut into 1” cubes
  • 1 red bell pepper, cut into strips
  • 1 orange bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 red onion, cut into strips
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 lime, cut into wedges

Directions

  1. Preheat oven to 425°F.
  2. Add chicken, bell peppers, and red onion to a large bowl. Drizzle with olive oil and season with cumin, chili powder, garlic powder, salt, pepper, smoked paprika, and cayenne pepper (if using). Toss to combine.
  3. Spread the chicken and vegetables onto a large sheet pan in an even layer. Bake for 20-25 minutes, or until chicken is cooked through and vegetables are softened.
  4. Serve with warm tortillas, sour cream, guacamole, and lime wedges.
