Ingredients
- 1 pound cooked lobster meat, diced
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken stock
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper
- 2 bay leaves
- 1 cup heavy cream
- Salt and pepper, to taste
Directions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the chicken stock, tomato paste, thyme, paprika, cayenne pepper, and bay leaves.
- Bring to a boil, reduce the heat to low and simmer for 30 minutes.
- Add the lobster meat and cream and simmer for another 15 minutes.
- Season with salt and pepper, to taste.
- Serve hot.
