Ingredients
- 1 tablespoon olive oil
- 1/2 pound Portuguese chorizo sausage, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 potatoes, cut into small cubes
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dried oregano
- 3 cups kale, chopped
- Salt and pepper to taste
Directions
- Heat the olive oil in a large pot over medium-high heat.
- Add the chorizo sausage and cook for 2 minutes, stirring occasionally.
- Add the onion and garlic and cook for an additional 3 minutes, stirring occasionally.
- Add the chicken broth, potatoes, smoked paprika, cayenne pepper, and oregano and bring to a boil.
- Reduce the heat to low and simmer for 20 minutes.
- Stir in the kale and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve warm.
