Ingredients

  • 1 tablespoon olive oil
  • 1/2 pound Portuguese chorizo sausage, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 potatoes, cut into small cubes
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 3 cups kale, chopped
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the chorizo sausage and cook for 2 minutes, stirring occasionally.
  3. Add the onion and garlic and cook for an additional 3 minutes, stirring occasionally.
  4. Add the chicken broth, potatoes, smoked paprika, cayenne pepper, and oregano and bring to a boil.
  5. Reduce the heat to low and simmer for 20 minutes.
  6. Stir in the kale and cook for an additional 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve warm.
