Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 tablespoon instant espresso powder
- 1/4 cup coffee-flavored liqueur
- 1 cup raisins
Directions
- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
- In a large bowl, beat together the butter and sugar until light and fluffy, about 3 minutes. Beat in the eggs, one at a time, then beat in the vanilla, espresso powder and liqueur.
- With a rubber spatula, fold in the dry ingredients and raisins until just combined.
- Drop the dough by rounded teaspoonfuls onto the prepared baking sheets, spacing them 2 inches apart. Bake until the edges are golden brown, 12 to 14 minutes. Transfer to a wire rack to cool completely.
