Ingredients

  • 4 pork chops
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 apples, peeled, cored, and sliced
  • 1/2 cup sherry
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Directions

  1. Season the pork chops with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the pork chops to the skillet and cook for 3-4 minutes on each side until nicely browned. Remove the chops from the skillet and set them aside.
  4. In the same skillet, add the sliced onion and cook for 2-3 minutes until softened.

  6. Pour in the sherry and let it simmer for 1-2 minutes to allow the alcohol to evaporate.
  7. Stir in the chicken broth, Dijon mustard, brown sugar, and dried thyme. Season with additional salt and pepper if desired.
  8. Return the pork chops to the skillet and spoon some of the sauce over them.
  9. Reduce the heat to low, cover the skillet, and let the chops simmer for 15-20 minutes until cooked through.
  10. Serve the sherry apple pork chops hot with the remaining sauce poured over them.
