Ingredients
- 2 tablespoons of olive oil
- 1 onion, diced

- 1 bell pepper, diced

- 1/4 teaspoon of red pepper flakes
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of salt
- 1/4 cup of white wine
- 2 cups of vegetable broth
- 1 (14.5 ounce) can of diced tomatoes
- 1 (15 ounce) can of chickpeas, drained and rinsed
- 1 pound of white fish fillets, cut into bite-sized pieces
- 2 tablespoons of fresh parsley, chopped
- 1 lemon, cut into wedges
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the carrots, bell pepper, chili powder, smoked paprika, cumin, oregano, red pepper flakes, black pepper, and salt. Stir to combine.
- Pour in the white wine and cook for 2 minutes, stirring occasionally.
- Add the vegetable broth, diced tomatoes, and chickpeas. Bring to a simmer and cook for 15 minutes.
- Add the fish fillets and cook until the fish is cooked through, about 5 minutes.
- Taste and adjust seasoning as needed.
- Serve the stew hot, garnished with parsley and lemon wedges.
