Ingredients

  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, peeled and diced
  • 1 bell pepper, diced
  • 1 teaspoon of chili powder
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of oregano
  • 1/4 teaspoon of red pepper flakes
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of salt
  • 1/4 cup of white wine
  • 2 cups of vegetable broth
  • 1 (14.5 ounce) can of diced tomatoes
  • 1 (15 ounce) can of chickpeas, drained and rinsed
  • 1 pound of white fish fillets, cut into bite-sized pieces
  • 2 tablespoons of fresh parsley, chopped
  • 1 lemon, cut into wedges

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the carrots, bell pepper, chili powder, smoked paprika, cumin, oregano, red pepper flakes, black pepper, and salt. Stir to combine.
  4. Pour in the white wine and cook for 2 minutes, stirring occasionally.
  5. Add the vegetable broth, diced tomatoes, and chickpeas. Bring to a simmer and cook for 15 minutes.
  6. Add the fish fillets and cook until the fish is cooked through, about 5 minutes.
  7. Taste and adjust seasoning as needed.
  8. Serve the stew hot, garnished with parsley and lemon wedges.
