Ingredients
2 tablespoons of olive oil
1 onion, diced
2 cloves of garlic, minced
2 carrots, peeled and diced

Directions
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrots, bell pepper, chili powder, smoked paprika, cumin, oregano, red pepper flakes, black pepper, and salt. Stir to combine.
Pour in the white wine and cook for 2 minutes, stirring occasionally.
Add the vegetable broth, diced tomatoes, and chickpeas. Bring to a simmer and cook for 15 minutes.
Add the fish fillets and cook until the fish is cooked through, about 5 minutes.
Taste and adjust seasoning as needed.
Serve the stew hot, garnished with parsley and lemon wedges.
