Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 1 teaspoon dried thyme
  • 4 cups vegetable broth
  • 1/2 cup white wine
  • 3 tablespoons all-purpose flour
  • 1 cup heavy cream
  • Salt and pepper to taste

Directions

  1. In a large pot over medium heat, melt the butter.
  2. Add the onion and garlic and cook for 2-3 minutes, or until the onion is softened.
  3. Add the mushrooms and thyme and cook for an additional 5 minutes.
  4. Pour in the vegetable broth, white wine, and bring to a boil.
  5. Reduce heat to low and simmer for 10 minutes.
  6. In a small bowl, whisk together the flour and cream until smooth.
  7. Add the flour mixture to the pot and stir to combine.
  8. Simmer for 5-10 minutes, or until the soup has thickened.
  9. Season with salt and pepper to taste.
  10. Serve hot.
