Ingredients
- 2 tablespoons butter
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups mushrooms, sliced
- 1 teaspoon dried thyme
- 4 cups vegetable broth
- 1/2 cup white wine
- 3 tablespoons all-purpose flour
- 1 cup heavy cream
- Salt and pepper to taste
Directions
- In a large pot over medium heat, melt the butter.
- Add the onion and garlic and cook for 2-3 minutes, or until the onion is softened.
- Add the mushrooms and thyme and cook for an additional 5 minutes.
- Pour in the vegetable broth, white wine, and bring to a boil.
- Reduce heat to low and simmer for 10 minutes.

- Simmer for 5-10 minutes, or until the soup has thickened.
- Season with salt and pepper to taste.
