Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 2 (14-ounce) cans diced tomatoes
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1 (8-ounce) package seitan, diced
- 1/2 cup vegan parmesan cheese, grated (optional)
Directions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook, stirring occasionally, until the onion is softened and lightly browned, about 5 minutes.
- Stir in the red pepper flakes, diced tomatoes, oregano, basil, salt and pepper.
- Reduce the heat to low and simmer for 15 minutes.
- Add the seitan and cook for 5 minutes more.
- Serve with vegan parmesan cheese, if desired.
