Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 2 (14-ounce) cans diced tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1 (8-ounce) package seitan, diced
  • 1/2 cup vegan parmesan cheese, grated (optional)

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook, stirring occasionally, until the onion is softened and lightly browned, about 5 minutes.
  3. Stir in the red pepper flakes, diced tomatoes, oregano, basil, salt and pepper.
  4. Reduce the heat to low and simmer for 15 minutes.
  5. Add the seitan and cook for 5 minutes more.
  6. Serve with vegan parmesan cheese, if desired.
