Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon red pepper flakes
2 (14-ounce) cans diced tomatoes
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon sea salt
1/4 teaspoon ground black pepper
1 (8-ounce) package seitan, diced

Directions
Heat the olive oil in a large skillet over medium heat.
Add the onion and garlic and cook, stirring occasionally, until the onion is softened and lightly browned, about 5 minutes.
Stir in the red pepper flakes, diced tomatoes, oregano, basil, salt and pepper.
Reduce the heat to low and simmer for 15 minutes.
Add the seitan and cook for 5 minutes more.
Serve with vegan parmesan cheese, if desired.
