Ingredients

  • 1 lb (450g) fresh white fish fillets (cod, haddock, or tilapia)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tomatoes, diced
  • 1 tablespoon tomato paste
  • 2 cups (480ml) coconut milk
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup (20g) fresh cilantro, chopped

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion, garlic, bell peppers, and tomatoes, and cook until softened, about 5 minutes.
  3. Stir in the tomato paste, coconut milk, cumin, paprika, oregano, salt, and pepper, and bring to a simmer for 5 minutes.
  4. Add the fish fillets and simmer for 10 minutes, until the fish is cooked through.
  5. Stir in the fresh cilantro and serve.
