Papaya-Stuffed Chicken and Basmati Rice

Ingredients

  • 1 large chicken breast, boneless, skinless
  • 1/2 cup basmati rice
  • 1/2 cup diced papaya
  • 1/2 cup diced tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375 degrees F.
  2. In a small bowl, mix together curry powder, cumin, ginger, salt, and pepper.
  3. Rub the mixture onto the chicken breast.
  4. In a large, oven-proof skillet, heat the olive oil over medium-high heat.
  5. Add the chicken breast and cook for 2 minutes on each side.
  6. Remove the chicken from the skillet and set aside.
  7. Add the basmati rice and diced papaya to the skillet and stir until the rice is lightly toasted.
  8. Add the diced tomatoes and stir until combined.
  9. Place the chicken back into the skillet and spoon the rice and papaya mixture over the chicken.
  10. Cover the skillet with a lid and place in the preheated oven for 20 minutes.
  11. Remove the skillet from the oven and let cool slightly before serving.
