Ingredients
- 1 (4-5 lb) whole chicken
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 2 tablespoons olive oil
- 1 lemon, halved
Directions
- Preheat oven to 375°F.
- In a small bowl, mix together garlic, thyme, rosemary, garlic powder, onion powder, paprika, sea salt, black pepper, and cayenne pepper.
- Rinse chicken and pat dry. Rub the outside of the chicken with the olive oil, then rub the seasoning mix all over the outside of the chicken.
- Place chicken in a roasting pan or baking dish. Squeeze lemon juice over the chicken, then place the lemon halves in the cavity of the chicken.
- Bake in preheated oven for 75-90 minutes, or until the internal temperature reaches 165°F.
- Let rest for 10-15 minutes before carving.
