1 pound boneless, skinless chicken breasts, cut into bite-sized cubes
1 onion, diced
2 cloves garlic, minced
4 cups low-sodium chicken broth
2 tablespoons fresh thyme, chopped
1/4 teaspoon red pepper flakes (optional)
1/2 teaspoon freshly ground black pepper
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup plus 2 tablespoons cold water
Directions
In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook, stirring often, until the chicken is cooked through, about 5 minutes.
Add the onion and garlic and cook for another 2 minutes, stirring often.
Add the chicken broth, thyme, red pepper flakes (if using) and black pepper. Bring to a boil and reduce heat to low. Simmer for 10 minutes.
Meanwhile, in a medium bowl, whisk together the flour, baking powder and salt. Add the cold water and stir until a dough forms.
Using a tablespoon, drop spoonfuls of the dough into the simmering broth and cook for 8-10 minutes, or until the dumplings are cooked through.
Serve warm.
