Ingredients
- 2 pounds of potatoes
- 1/2 cup of pickles, diced
- 1/2 cup of bacon, cooked and crumbled
- 1/4 cup of red onion, diced
- 1/2 cup of parsley, chopped
- 3 tablespoons of olive oil
- 2 tablespoons of white wine vinegar
- 1 teaspoon of Dijon mustard
- 1 teaspoon of sugar
- Salt and pepper, to taste
Directions
- Bring a large pot of salted water to a boil. Add the potatoes and cook until tender, about 15 minutes.
- Drain the potatoes and set aside to cool.
- In a large bowl, combine the potatoes, pickles, bacon, onion, and parsley.
- In a small bowl, whisk together the olive oil, vinegar, mustard, sugar, salt, and pepper.
- Pour the vinaigrette over the potato mixture and toss to combine.
- Refrigerate for at least 30 minutes before serving.
