Ingredients

  • 2 pounds of potatoes
  • 1/2 cup of pickles, diced
  • 1/2 cup of bacon, cooked and crumbled
  • 1/4 cup of red onion, diced
  • 1/2 cup of parsley, chopped
  • 3 tablespoons of olive oil
  • 2 tablespoons of white wine vinegar
  • 1 teaspoon of Dijon mustard
  • 1 teaspoon of sugar
  • Salt and pepper, to taste

Directions

  1. Bring a large pot of salted water to a boil. Add the potatoes and cook until tender, about 15 minutes.
  2. Drain the potatoes and set aside to cool.
  3. In a large bowl, combine the potatoes, pickles, bacon, onion, and parsley.
  4. In a small bowl, whisk together the olive oil, vinegar, mustard, sugar, salt, and pepper.
