Ingredients
- 1 lb. lean beef, cut into cubes
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 large potatoes, peeled and cubed
- 2 carrots, peeled and sliced
- 1/2 teaspoon paprika
- 1 teaspoon caraway seeds
- 1 teaspoon dried marjoram
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- 2 cups beef stock
- 1 tablespoon tomato paste
Directions
- In a large pot, heat the oil over medium-high heat.
- Add the beef cubes and cook, stirring occasionally, until browned.
- Add the onion, garlic, potatoes, carrots, paprika, caraway seeds, marjoram, salt and pepper. Stir to combine.
- Add the beef stock and tomato paste, stir to combine.
- Bring to a boil, then reduce the heat to low and simmer, covered, for 30 minutes, or until the beef and vegetables are tender.
- Serve hot.
