Ingredients

  • 1/4 cup olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 28-ounce can diced tomatoes
  • 1/2 cup dry white wine
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 2 cups fish broth
  • 1 pound cod fillets, cut into 2-inch pieces
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound scallops
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  3. Add the red pepper flakes and cook for 1 minute.
  4. Add the diced tomatoes, wine, oregano, and thyme and bring to a boil.
  5. Reduce the heat to low and simmer for 10 minutes.
  6. Add the fish broth and bring to a boil.
  7. Add the cod, shrimp, and scallops and cook until the seafood is cooked through, about 5 minutes.
  8. Stir in the salt, pepper, and parsley.
  9. Serve hot.
