Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tomatoes, diced
  • 1 pound green beans, trimmed and cut into 1-inch pieces
  • 1/4 cup water

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the cumin, coriander, paprika, turmeric, salt, and pepper and cook for 1 minute.
  4. Add the tomatoes and green beans and cook for 2 minutes.
  5. Add the water and bring to a simmer.
  6. Cover and cook until the beans are tender, about 10 minutes.
  7. Uncover and cook until the liquid has evaporated, about 5 minutes.
  8. Serve and enjoy!
