In a medium saucepan, melt the butter over medium heat. Add the flour and stir until a paste is formed.
Add the brown sugar and nutmeg and stir until the mixture is smooth. Add the pineapple juice and stir until the sauce is thickened. Remove from the heat.
In a 9x13-inch baking dish, spread the pineapple tidbits in an even layer. Pour the sauce over the pineapple and spread evenly.
Sprinkle the coconut over the top of the dish. Bake for 20 minutes or until the sauce is bubbly and the coconut is golden brown.
Let cool for 10 minutes before serving.
