Ingredients
- 1 cup wild rice
- 2 1/2 cups chicken or vegetable broth
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 2 cloves garlic, minced
- 1/2 tsp dried thyme
- 1/2 tsp dried sage
- 1/2 tsp dried rosemary
- Salt and pepper to taste
- 1/4 cup chopped parsley
- 1/4 cup chopped pecans or almonds
- 1/4 cup dried cranberries or raisins
- 2 tbsp olive oil
Directions
- Rinse the wild rice under cold water and drain well.
- In a large pot, bring the broth to a boil and add the wild rice. Reduce heat to low, cover, and simmer for 40-45 minutes or until the rice is tender and liquid is absorbed.
- In a skillet, heat olive oil over medium heat. Add onion, celery, carrots, and garlic. Cook until vegetables are softened, about 5 minutes.
