Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 2 cups sliced mushrooms
  • 1 bunch Swiss chard, washed and chopped
  • 1 cup roasted red peppers, diced
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the garlic and onion and cook until softened, about 3 minutes.
  3. Add the mushrooms and cook until lightly browned, about 5 minutes.
  4. Add the Swiss chard and cook until wilted, about 5 minutes.
  5. Add the roasted red peppers and cook until heated through, about 2 minutes.
  6. Season with salt and pepper, to taste.
  7. Serve warm.
