Ingredients

  • 1 pound dried pinto beans
  • 3 slices of bacon
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups chicken broth

Directions

  1. Soak the pinto beans in a large bowl with enough water to cover them for at least 8 hours.
  2. Drain the beans and discard the water.
  3. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside.
  4. Add the onion and garlic to the pot and sauté until the onion is translucent.
  5. Add the chili powder, cumin, oregano, smoked paprika, salt, and pepper and sauté for 1 minute.
  6. Add the chicken broth and pinto beans to the pot and mix well.
  7. Bring the mixture to a boil, reduce the heat to low, and simmer for 1 hour, stirring occasionally.
  8. Once the beans are tender, remove the pot from the heat and add the bacon back in.
  9. Serve and enjoy!
