Ingredients

  • 1 pound of sausage
  • 2 cups of all-purpose flour
  • 3 eggs
  • 1½ cups of milk
  • ¼ teaspoon of salt
  • 2 tablespoons of butter, melted

Directions

  1. Preheat oven to 400°F.
  2. In a large skillet over medium heat, cook the sausage until browned and cooked through, about 8 to 10 minutes.
  3. In a large bowl, whisk together the flour, eggs, milk, salt, and melted butter until combined.
  4. Grease a muffin tin with butter or cooking spray.
  5. Fill each muffin cup with the batter, about ⅔ full.
  6. Top each popover with the cooked sausage.
  7. Bake in preheated oven for 25 minutes, or until golden brown.
  8. Serve hot.
