Ingredients

  • 3 cups white vinegar
  • 1 cup granulated sugar
  • 1/4 cup packed light-brown sugar
  • 2 tablespoons kosher salt
  • 2 tablespoons mustard seeds
  • 1 tablespoon celery seeds
  • 1 tablespoon ground turmeric
  • 2 teaspoons ground ginger
  • 3 pounds pickling cucumbers, cut into 1/4-inch-thick slices
  • 2 large onions, cut into 1/4-inch-thick slices

Directions

  1. In a large saucepan, combine the vinegar, granulated sugar, brown sugar, salt, mustard seeds, celery seeds, turmeric, and ginger. Bring to a boil over medium-high heat.
  2. Add the cucumber and onion slices and cook for 5 minutes. Remove from the heat.
  3. Pack the pickles into 4 clean pint jars. Ladle the hot liquid over the pickles, leaving 1/4 inch of headspace.
  4. Wipe the rim of each jar clean, then top with a lid and ring. Let cool at room temperature for at least 24 hours before serving.
