3 pounds pickling cucumbers, cut into 1/4-inch-thick slices
2 large onions, cut into 1/4-inch-thick slices
Directions
In a large saucepan, combine the vinegar, granulated sugar, brown sugar, salt, mustard seeds, celery seeds, turmeric, and ginger. Bring to a boil over medium-high heat.
Add the cucumber and onion slices and cook for 5 minutes. Remove from the heat.
Pack the pickles into 4 clean pint jars. Ladle the hot liquid over the pickles, leaving 1/4 inch of headspace.
Wipe the rim of each jar clean, then top with a lid and ring. Let cool at room temperature for at least 24 hours before serving.
