Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 pound ground beef
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups beef broth
  • 1 (14.5-ounce) can diced tomatoes, with juices
  • 1 (6-ounce) can tomato paste

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, bell pepper, and jalapeno pepper and cook until the vegetables are softened, about 5 minutes.
  2. Add the ground beef and cook, stirring occasionally, until it is browned, about 5 minutes.
  3. Stir in the chili powder, cumin, coriander, smoked paprika, salt, and pepper and cook for 1 minute.
  4. Pour in the beef broth and diced tomatoes with their juices and bring to a simmer. Stir in the tomato paste and simmer for 15 minutes, stirring occasionally.
  5. Serve hot with your favorite toppings, such as sour cream, shredded cheese, and sliced jalapenos.
